Recipe: Lactofree Strawberry & Cream Cheesecake

Since starting Fashercise, I’ve been very committed to eating healthier, and one of the main changes I’ve made is cutting lactose from my diet whenever possible. A few years ago, I was diagnosed as lactose intolerant, but never really did much about it – it didn’t make me feel great, but not really sick either. However, I noticed that cutting down drastically has made me feel so much better, so when the lovely folks at Lactofree approached me to work with them on a project over the coming months, I of course said yes. #SAYYESTOSUMMER!

My first challenge was to come up with a recipe for a dessert based around the classic British summertime combo, strawberries and cream. With Wimbledon in full swing and the 4th of July coming up, I figured a combo between a traditional British and American dessert would be the perfect dish, so the idea of a Lactofree Strawberry & Cream Cheesecake was born. It was really easy to make, not too heavy or too sweet, and wonderfully moreish. Here’s my recipe:

INGREDIENTS

250g digestive biscuits
100g Lactofree spreadable
1 tub Lactofree soft white cheese
250ml Lactofree cream
1 tsp vanilla essence
30g sugar
3 sheets of leaf gelatine
A handful of juicy strawberries

METHOD

1// Soak the sheets of leaf gelatine in cold water for 5 mins. Meanwhile, put the Digestive biscuits in a food processor and mix until they’re fine crumbs. Melt the butter in a pan, add to the biscuits in the blender until it’s a crumbly paste. Put into a baking tin or divide over individual dishes (great small dessert in shot glasses), press down until solid and put in the fridge for 30mins to set.

2// Take the gelatine sheets and squeeze out the moisture, put into a pan and bring to the boil with the cream until fully dissolved. In the food processor, mix the soft cheese with the sugar, vanilla and a couple of strawberries until fully blended, then fold the cream and gelatine mixture in. Pour over the cooled biscuit base and put back in the fridge for a few hours.

3// When fully set, take the cheesecake out, decorate with a couple of strawberries and enjoy!
