Easy-Peasy 30min Chocolate Chunk Muffins
I’m not much of a sweet-tooth, so baking cakes has never really been my thing. Lately though, I’ve been having a great time messing about in the kitchen, so I decided to attempt baking homemade chocolate chunk muffins the other day. I was shocked at how easy and delicious they were, so I thought I’d share my recipe with you fellow baking newbies. It’s not exactly rocket science, but so satisfying when you take a bite out of a muffin you baked from scratch!
Ingredients for 12 muffins:
12 muffin paper cases
280g of plain flour
1 tablespoon of baking powder
115g caster sugar
2 eggs
250ml milk
175g of chocolate chunks (dark, milk, white – your choice!)
85g of butter (melted and cooled down)
1 tablespoon of vanilla extract
pinch of salt
It’s ridiculously easy: preheat the oven to 200° and line a muffin tin with the muffin cases. Put the flour, sugar, baking powder, salt and chocolate chunks together in a bowl. Beat the eggs in another, then add the milk, butter and vanilla extract.
Make a little well in the middle of the dry ingredients and pour in the liquid ingredients, stir gently until you get a nice mixture, then spoon it into the muffin cases (and eat the rest with a spoon :)), put it in the oven for 20 mins et voilà!
Told you it was simple… you can of course swap the chocolate for other things like berries, banana, etc… Bon appetit!
