National Vegetarian Week: Pea and Mint Soup



Last week, a man gave me a little cup with something to try in Selfridges, so I took it. And before you ask – didn’t your mom ever tell you not to take things from strange men? She was there and she told me I could. So I did it. It was Daylesford Organic’s new Pea and Mint soup, part of their summer range. I was smitten and bought the lot.

I’ve done a post on my homemade pumpkin soup before, and if you remember, I mentioned how much I usually hate soup. The fact that I love this green, gooey, cold one is an absolute shocker. I’ve had a cup pretty much every day since, but seeing as the soup isn’t available from their online shop and I can’t go running to Selfridges every time I feel like it, I had a go at it myself, and although not quite as perfect as the Daylesford Organic one, it’s pretty damn good. Even better, it’s with ingredients you usually have in your fridge and freezer, and takes about 10 minutes.

So in honour of National Vegetarian Week which started today, here’s my recipe for easy, refreshing and healthy pea and mint soup, with grilled cheese toast.

Ingredients: (you can adjust this all a bit to taste and feeling…)
350g of frozen peas
2 small onions
1 cube of vegetable stock
A handful of mint leaves
A few tablespoons of single cream (or double)



1: Fry the chopped onions in a bit of olive oil until soft, meanwhile pour some boiling water over the peas so they defrost

2: Add the defrosted peas and mint leaves to the onions and let them cook together for a few more minutes

3: Add the stock (about 500ml) to the veggies, and let it boil for a few minutes

4: Take a handheld blender and mix the lot. Add the cream to taste – if you want a creamy one, add more, if you want a healthy one, add a little less (or change for crème fraiche or yoghurt). Salt and pepper to taste.

5: If you don’t like chunks, put the mixture through a sieve, otherwise, you’re done!

6: Serve hot or cold, with grilled cheese and a few drops of Worcester Sauce on toast

TADAAAAA. It’s lush, I promise. And it means I’ve finally found a good use for my gorgeous Le Creuset cocottes.
